Different Ways to Incorporate Tofu into Meals
When it comes to Tofu, the possibilities are endless. From baking to frying and everything in between, Tofu is also an ingredient that can be used to replace other ingredients in various recipes.
Since Tofu varies in firmness and texture, it’s the perfect soy substitution for eggs, cheese, dips and more. Whether you’re lactose intolerant or just trying to cut down on your dairy and egg intake, you can count on Superior Natural to show you the way for all soy substitutions!
Egg
Don’t skip dessert! If you love to bake and your recipe requires an egg or two, simply swap out the egg with tofu. Replace one egg with 1/4 cup of Soft Tofu or Smooth Medium Firm Tofu, well drained and puréed. Egg substitution may require you to experiment with recipes and adjust ratios. Certain recipes will work with 1/4 cup of tofu in lieu of 2 eggs, depending on the moisture of the finished product.

Easy Lemon Cookies
Ingredients:
1\2 Cup of Superior Natural Soft Tofu, 1 Box of Lemon Cake Mix, 1\3 Cup of Oil, 1 Teaspoon of Vanilla Extract, 1\2 Cup of Powder Sugar, 1 Teaspoon Lemon Juice, 1 Tablespoon of Superior Natural Unsweetened Soy Drink, Lemon Zest. *Optional: Top glazed cookies with sugar sprinkles
Directions:
Using a mixer, combine soft tofu, vanilla extract and oil together. Once all ingredients are combined, the dough will be sticky. Cover and refrigerate for one hour. Preheat oven to 350 degrees. Using a tablespoon, scoop the dough and roll it into small balls. Add the balls of dough to a cookie sheet lined with parchment paper. Bake for 20 minutes at 350 degrees. For the glaze, combine powder sugar, lemon juice, soydrink and lemon zest together and set aside. Once the cookies are finished baking, set them aside to cool. After the cookies are finished cooling, dip each top of the cookie into the lemon glaze and set on a tray for the glaze to set. Store cookies in a container with a lid.
Ricotta Cheese
Many casseroles and pasta dishes like Lasagna call for ricotta cheese to add to the creaminess of the dish. If you’re a fan of lasagna but prefer to omit the diary and keep it plant-based, opt for medium firm tofu instead. The texture of medium firm tofu is slightly soft and resembles the same texture as traditional ricotta cheese. Start by draining the tofu and mashing it in a bowl followed by adding seasonings such as garlic, oregano, basil, salt and pepper. Feel free to add additional vegan cheeses like parmesan and mozzarella to your lasagna too!
Breakfast Scramble
Whether it’s breakfast or brunch, a scramble is a recipe that you can customize with different veggies. With a soy scramble, you can still enjoy this savory breakfast recipe by using firm tofu instead of scrambled eggs. Start by draining the firm tofu and adding it into a skillet that has been drizzled with some oil to prevent sticking. Add tofu and break apart until tofu resembles an egg scramble and cook for about 8-10 minutes on medium heat. Season with desired seasonings (garlic, salt, pepper, turmeric) and add fresh veggies or vegan cheese. Serve in a wrap or on toast!
Sour Cream
Sour cream is a common ingredient to use for a topping for tacos, baked potatoes and can be used as a base for many dips. To keep it dairy free, blend silken tofu together with 2-4 tablespoons of lemon juice and desired seasonings such as ranch seasoning to create a creamy plant-based dip for veggies and chips.
