Quiche (Eggless) —Using Superior Natural Firm Tofu

“Firm Tofu from Superior Natural is a staple in my Household. They have a variety of Textures and with this one the Firmness is perfect to our liking. Being a Vegetarian / often Vegan, I love making various Dishes that suits for our eating. Recently I have been exploring different ways to substitute food with Superior Natural’s Tofu that I technically cannot consume as a Vegetarian / Vegan.

I have made Quiche (Eggless) many times but never got satisfied with the outcome, no matter how pretty it looked or good it tasted. It was always lacking something like the texture or I just wasn’t happy with it. Finally last weekend I got this Vegan Quiche perfectly done. Everything came out impeccably.

Funny thing is I didn’t go with any Recipe, just throwed some ingredients together into my Vitamix Blender that came to my mind. I soaked some handful cashews for 15 minutes, used a medium dry Tofu which I microwaved for 5 minutes to absorb the Water. Added the cashews, tofu (crumbled), ground Flaxseed, pesto, cayenne pepper, salt, pepper, some oregano leaves, lemon juice and nutritional yeast into the Mixer and blended it for 5 minutes on Med-High Speed. Pour the filling into the pie dish (pre-baked) and layer with gilled zucchini slices.

Bake for 25-30 minutes on 400 degrees

Panang Curry (with mushrooms, veggies and tofu)- Using Superior Natural Organic Extra Firm Tofu

I froze and defrosted the tofu to remove excess moisture from the tofu creating a spongy texture! Great for absorbing sauce :)

On Facebook I joined the Jamie Oliver’s Cookbook Club and this month for July we are using a Vietnamese Cookbook. It’s nice to see people from all over the world trying so many delicious recipes. Was glad I could make a vegan version of this recipe and it turned out great - can’t wait to eat leftovers for lunch!
