兔年開運吉祥菜-百財都福水餃 Fortune Tofu Dumplings
The Chinese New Year is lively, and every household will want to decorate their facades to add joy to embrace the new year with open arms that symbolizes the arrival of good luck and wealth. The most important part of the Chinese New Year is the family reunion when everyone comes home for New Year’s Eve dinner. In different countries, a lot of cultures have symbolic foods and have special meanings behind them like puns in the dish name. This Year of the Rabbit, let us use this auspicious dish - BaiCai ToFu Dumplings to pray for good luck and prosperity in the Year of the Rabbit, and wish everyone good health and safety.
Fortune Tofu Dumplings
The homonym of 百財都福 dumpling is the same as the Chinese character in Fu福, which symbolizes good fortune. The homophony of Baicai is the same sound as the Chinese character of cabbage because the dumpling looks like cabbage, so it is named Baicai Dufu in Chinese. The homonyms of the dish names are not only interesting, but you can also feel the feeling of being blessed and cared for with every bite. When preparing this New Year dish, you can also make it with your family and friends as working together symbolizes the concept of reunion and unity.
Dumpling Filling:
1 pack of Superior Natural Organic Medium Firm Tofu
1 tbsp Ginger paste
1 tbsp Garlic paste
1 tbsp Sriracha
1 tsp Five-spice powder
2 tsp White pepper
1 tsp Turmeric powder
2 tbsp Soy sauce
1 tbsp Toasted sesame oil
1 tbsp Oyster sauce
80g Green onion
1/2 tbsp Fresh basil leaves
How to make the dumpling dough:
We need to make two doughs; one is green, and one is white. You will need 420g of all-purpose flour, 200g of water, and 1/3 tsp salt to make the white dough. 420g of all-purpose flour, 200g of spinach juice, and 1/3 tsp salt to make the green dough.
How to make spinach juice:
Put 200g of spinach, and cook in boiling water for about 3 mins. Pour out the extra water in the pot and put cooked spinach in the mixer and a little bit of water to become spinach juice.
Mix the flour and spinach juice in a large bowl for the green dough. Stir into a loose mixture first then knead the dough for about 2 minutes and rest the dough for about 15 minutes. Repeat this step twice until the dough turns into a smooth ball and then let the dough rise for an hour.
Mix the flour and water for the white dough and then follow the green dough instructions.
One hour later, the dough will become smooth. Poke a hole in the middle of both dough balls and knead while pulling the shape. Cut the knife and knead the dough into long strips. After rolling the dough into strips, the green strip will be shorter than the white strip.
Flatten the green dough and use the rolling pin to roll out the dough until it can cover the white dough.

Cut the one strip into slices and sprinkle with flour. Flatten one small dough, pinch one side, and start rolling clockwise. Put the filling and dab a little water around the dumping skin. Fold up and down into a semicircle and pinch around. Then start to crease to a flower shape on top of the dumpling.
Prepare a large pot of water to boil, add dumplings and stir the water to avoid the dumplings from sticking to the pot. After boiling, pour a cup of water and wait for the water to boil to ensure the dumplings are fully cooked.
For the dipping sauce, you will need 3 tbsp of soy sauce, 1 tsp ginger paste, and 1 tbsp of mushroom chili oil paste (optional) to add flavor to the dumplings.
