Tofu Lo Mein

Ingredients:

  • 1 pkg of Superior’s Northern Style Tofu, cut into cubes

  • 1 box of Brown Rice noodles or noodles of your choice

  • 1 Large Red Bell Pepper, sliced into strips

  • 1 Large Carrot, sliced into strips

  • 6-8 Baby Bella Mushrooms, cut into slices

  • 1 cup of Snow Peas

  • 2 Tablespoons of Olive Oil

Sauce:

  • 1\2 cup Soy Sauce

  • 1\2 cup Water

  • 1 tsp Ginger, grated

  • 1 Large Garlic Clove, minced

  • 1 Tbsp Sriracha

  • 1 Tbsp Honey

  • 1 Tbsp Rice or Cider Vinegar

 

Instructions:

  1. Cook noodles according to package directions.

  2. Combine all ingredients needed for the sauce in a bowl and whisk together. Set aside. 

  3. In a large skillet,  heat oil on medium heat and sauté cubed tofu until a slight crust appears on all sides of the tofu. Remove the tofu and add peppers, mushrooms, snow peas and carrots until slightly tender. Add tofu, cooked noodles and sauce and gently toss together. Serve with a sprinkle of sesame seeds.
